  • The paya is said to have originated from south and central Asian countries, later adapted by the Muslim cooks of Lahore, Hyderabad and Lucknow. Cow or mutton trotters are gently simmered on low heat (usually overnight) in a soup base made of onions, garlic and spices. 🥘
